Skinny Creamy Tuscan Chicken

Ingredients
The Chicken
- 3 medium chicken breast (boneless, skinless, butterflied)
- 1 Tbsp olive oil
- 1 tsp dried oregano
- 1 tsp table salt
- ½ tsp ground black pepper
The Sauce
- nonstick cooking spray
- 1½ tsp minced garlic
- 1½ cups cherry tomatoes (halved)
- 3 cups fresh baby spinach
- ½ cup unsweetened coconut milk
- ½ cup skim milk
- ¼ cup parmesan cheese (grated)

Instructions
- In a skillet over medium heat, heat oil. Add chicken and season with salt, pepper, and oregano. Cook until golden and no longer pink, 8 minutes per side. Remove from skillet and set aside.1 Tbsp olive oil, 1 tsp dried oregano, 1 tsp table salt, ½ tsp ground black pepper
- In the same skillet over medium heat, spray with nonstick cooking spray and stir in minced garlic and cook until fragrant, about 1 minute. Add cherry tomatoes and season with salt and pepper. - Stir in coconut milk, skim milk, and parmesan cheese, and bring mixture to a simmer. Reduce heat to low and simmer until sauce is slightly reduced, about 3 minutes.
