Preheat oven to 350 F. Line a large sheet pan or two with parchment paper. Set aside.
In a large mixing bowl, add all listed ingredients and mix until fully blended.
Using a small, 1 inch cookie scoop, scoop the sausage mixture out into individual 1 inch balls, setting them on the parchment lined sheet pans. Makes about 48 sausage balls. You can roll them in your hand to shape or leave them as-is.
Bake in the preheated oven at 350 F for 25-30 minutes. Brown in a skillet for the crusty outer layer if desired.
