Pre-heat oven to 350F (180C). Grease and flour a 12 cup muffin tin.
Topping
In a small bowl mix together the flour and monk fruit sweetener. Add the butter and mix with a fork, pastry cutter or even clean hands to form coarse crumbs. Set aside.
2½ Tbsp monk fruit sweetener, 2 Tbsp light vegetable oil spread, 3½ Tbsp all purpose flour
Muffins
In a medium bowl beat with a fork, the egg, milk, lemon juice, and unsweetened applesauce until well combined.
1 large egg, ⅓ cup skim milk, 2½ Tbsp unsweetened applesauce, 1 Tbsp lemon juice
In a large bowl, whisk together the Kodiak pancake mix, baking powder, salt, zest, lemon extract, and monk fruit sweetener. Make a well in the center and add the beaten egg mixture and lemon juice. Mix just until flour is wet, about 15-16 stirs, no more.
1 cup Kodiak Cakes Buttermilk flapjack & waffle mix, 1¼ tsp baking powder, ¼ tsp salt, 1 tsp lemon zest, 7 Tbsp monk fruit sweetener, ½ tsp lemon extract
Spoon the batter into the prepared muffin pan. Top with the crumb topping and bake for about 18-25 minutes or until toothpick comes out clean. Let cool about 10 minutes before removing from pan. Enjoy!
