In an 8-quart Instant Pot, add whole chicken breasts, chicken broth, Rotel, onion, bell peppers, cilantro, oregano, chili powder, and salt. Stir until mixed well.

Place lid and cook on meat/stew setting for 45 minutes. Let slow-release.
Using two forks, shred the chicken inside the pot and give the soup another good stir.
Serve hot, garnished with reduced fat shredded mozzarella, and your favorite toppings including avocado, cilantro, green onion, and lime wedges.
