In a medium-size mixing bowl, add and mix together your dry ingredients: oat flour, self-rising flour, stevia, baking powder, salt.
In the same bowl, add your wet ingredients: skim milk, egg, unsweetened applesauce, vanilla extract. Mix well.
Heat a griddle or skillet on medium heat. Spray with cooking spray. Once heated, take a large ice cream scoop (regular size) and use one scoop of the batter for each pancake, adding to the griddle. Wait for bubbles to appear and pop in the cooking batter before flipping. Cook the other side until browned. Repeat until all batter is used.
