We’ve been craving sausage balls lately, so we found a delicious-looking recipe and adapted it to make it point-friendly. The original recipe at Recipe Diaries only needed some slight tweaking, using oat flour instead of almond flour, fat-free cream cheese instead of full fat, and adding in an egg for cohesion since we took out a lot of the fat.

Here’s what we came up with.

Ingredients
  

  • 2 cups oat flour
  • 2 cups reduced fat shredded cheddar cheese
  • 8 oz fat free cream cheese
  • 1 lb Italian turkey sausage
  • 1 large egg

Instructions
 

  • Preheat oven to 350 F. Line a large sheet pan or two with parchment paper. Set aside.
  • In a large mixing bowl, add all listed ingredients and mix until fully blended.
  • Using a small, 1 inch cookie scoop, scoop the sausage mixture out into individual 1 inch balls, setting them on the parchment lined sheet pans. Makes about 48 sausage balls. You can roll them in your hand to shape or leave them as-is.
  • Bake in the preheated oven at 350 F for 25-30 minutes. Brown in a skillet for the crusty outer layer if desired.
