Have you ever had that one recipe that was so good it was like next-level good? This recipe from Oh Sweet Basil, with a couple of minor tweaks (like adding Italian sausage to the mix) was one of those. Making it skinny wasn’t too hard, either. Just use the leanest ground beef and bacon you can find, swap out the Italian sausage (not in the original recipe, but something I always added before anyway) for Turkey Italian sausage, and my friends, we have ourselves a Too Good To Be Skinny Instant Pot Chili.

Ingredients

  • Lean Ground Beef: we’re using the leanest ground beef available. Try for 96% lean if available.
  • Turkey Italian Sausage: For flavor. We’re using Turkey Italian sausage in place of regular Italian sausage to make the recipe skinnier.
  • Center Cut Bacon: bacon gives this recipe a boost of flavor, and Center Cut is 25% less fat than regular bacon.
  • Red Onion: for flavor.
  • Red Bell Pepper: for flavor.
  • Jalapeno: for flavor.
  • Fire Roasted Diced Tomatoes: using the fire roasted tomatoes instead of plain diced tomatoes gives this recipe a boost of flavor. (Can you tell there’s tons of flavor in this recipe?!)
  • Tomato Paste: for thickness.
  • Beans: we’re using three different kinds of beans, and while many people are adamantly opposed to adding beans to chili, these make the dish more hearty and go a lot further without adding too many more calories or WW smart points.
  • Beef Broth: to help mix the ingredients better, plus give another boost of flavor.
  • Minced Garlic: for, you guessed it, flavor!
  • Worcestershire Sauce: for even more flavor!
  • Spices: we’re using a lot of spices in this recipe to pack it to the max with lots and lots of good, hearty flavor.

Ingredients
  

  • 1 lb extra lean ground beef 96 % lean
  • 1 lb turkey Italian sausage
  • 6 strips center cut bacon (diced into bite-sized pieces)
  • 1 medium red onion (diced)
  • 1 red bell pepper (diced)
  • 2 jalapenos (diced, deseeded)
  • 15 oz canned black beans (drained, rinsed)
  • 15 oz kidney beans (drained, rinsed)
  • 15 oz pinto beans (drained, rinsed)
  • 15 oz Hunts fire roasted diced tomatoes
  • 6 oz tomato paste
  • 2 cups beef broth
  • 1 Tbsp dried oregano
  • 2 tsp ground cumin
  • 2 tsp salt
  • 1 tsp ground black pepper
  • 1 tsp smoked paprika
  • 2 Tbsp chili powder
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp minced garlic

Instructions
 

  • In a skillet over medium heat, cook bacon until done. Set aside, leaving the bacon grease in the skillet.

  • Add the lean ground beef and turkey Italian sausage, diced red onion, diced red bell pepper, and diced jalapeno to the skillet and brown the meat completely.

  • Meanwhile, In a 6-quart Instant pot, add the drained and rinsed cans of black beans, kidney beans, and pinto beans, along with the fire-roasted diced tomatoes, tomato paste, beef broth, dried oregano, ground cumin, salt, pepper, smoked paprika, chili powder, Worcestershire sauce, and minced garlic. Add the cooked bacon.
    15 oz canned black beans, 15 oz kidney beans, 15 oz pinto beans, 15 oz Hunts fire roasted diced tomatoes, 6 oz tomato paste, 2 cups beef broth, 1 Tbsp dried oregano, 2 tsp ground cumin, 2 tsp salt, 1 tsp ground black pepper, 1 tsp smoked paprika, 2 Tbsp chili powder, 1 Tbsp Worcestershire sauce, 1 Tbsp minced garlic
  • Drain the fat and liquid from the meat mixture and add meat mixture to the instant pot. Give everything in the Instant Pot a good stir.
  • Cook on the meat/stew setting for 40 minutes and then let the pressure slow release for another 10-15 minutes.
  • Enjoy with toppings of choice, such as fat-free or reduced fat shredded cheese, sliced jalapeno, onion, or other toppings as desired.
