This is another simple, dump and go recipe that takes hardly any time to make and is super family-friendly. Skinny Taco Soup is a crowd favorite at my house, and is a go-to meal on cooler nights.

Ingredients
- 1 lb ground turkey (99% lean)
- 14 oz black beans (reduced sodium)
- 28 oz pinto beans (reduced sodium)
- 30 oz Rotel (mild)
- 14 oz corn
- 1 oz taco seasoning
- 1 oz Ranch dressing mix
- 2 cups chicken broth (reduced sodium)

Instructions
- In a large skillet, brown the ground turkey until done.1 lb ground turkey
- In a large pot or Instant Pot, add in black beans, pinto beans, Rotel, corn, taco seasoning, Ranch dressing mix, and chicken broth. Add the browned ground turkey. Stir and mix well.14 oz black beans, 28 oz pinto beans, 30 oz Rotel, 14 oz corn, 1 oz taco seasoning, 1 oz Ranch dressing mix, 2 cups chicken broth
- Simmer over medium heat until warmed and the spices and flavors have time to meld together. Serve hot, garnished with your favorite toppings. (Try cilantro, green onion, sliced jalapeno, sliced avocado, reduced-fat cheese, and/or reduced-fat sour cream.)
