When I found this dump-and-go recipe, I knew I had to make it skinny and share it with y’all. With ranch dressing mix, cream cheese, and bacon, this was a sure-fire winner-winner-chicken dinner, and I’m happy to report that Skinny Slow Cooker Crack Chicken delivered. It’s delicious, y’all! It’s family-friendly and so easy to throw together.

Ingredients
Chicken: we’re using boneless, skinless chicken breast. You can also use boneless chicken thighs for additional points.
Ranch Dressing Mix: for flavor!
Cream Cheese: I used fat-free cream cheese for the lowest points. You can use reduced-fat or regular cream cheese, just be sure to calculate the points accordingly.
Bacon: I used Hormel Black Label Center Cut bacon, which is 25% less fat than regular bacon for fewer points.
Shredded Cheese: I used a reduced-fat fiesta blend, but any reduced-fat or fat-free shredded cheese should work well. Calculate your points accordingly.
Green Onions: for garnish.
Skinny Slow Cooker Crack Chicken
Equipment
- Slow Cooker
Ingredients
- 2 lb boneless skinless chicken breast
- 1 oz Ranch dressing mix (1 envelope)
- 16 oz fat-free cream cheese (2 packages)
- 8 slices center-cut bacon (cooked, sliced into small pieces. I use Hormel Black Label 25% less fat.)
- 1½ cups reduced-fat shredded cheese (cheddar or fiesta blend work well)
- ½ cup green onions (sliced)
Instructions
- Add the chicken thighs to the slow cooker. Sprinkle over the ranch seasoning mix. Place the cream cheese on top of the chicken.2 lb boneless skinless chicken breast, 1 oz Ranch dressing mix, 16 oz fat-free cream cheese
- Cover and cook on LOW for 7 hours without opening the lid during the cooking time.
- Shred the chicken, I do this right in the slow cooker with 2 forks. Stir the cooked cream cheese into the shredded chicken and also stir in the bacon. Spread out into an even layer. Sprinkle over the cheese. Cover for 10 more minutes to allow the cheddar cheese to melt.8 slices center-cut bacon, 1½ cups reduced-fat shredded cheese
- Sprinkle over the green onions. Enjoy!½ cup green onions
