Muffins are a meal-preppers dream. You’re making multiple things at one time, they’re easy to store and super easy to grab and eat when the notion strikes. Also, the older I get, the more I like all things lemon-flavored, so let’s make some lemon muffins today, shall we? Great for breakfast or a snack, you can’t go wrong.

Ingredients
For the Crumb Topping:
- Flour: For texture.
- Zero-Calorie Sweetener: I use monk fruit sweetener or stevia.
- Light Butter: I use Country Crock light vegetable spread, but you can use whichever light butter you prefer.
For the Muffins:
- Kodiak Cakes Flapjacks and Waffle Mix: I use this in place of the flour because it helps keep the points just a bit lower and adds a nice flavor and texture to the muffins.
- Baking Powder: helps the muffins rise.
- Salt: for flavor, and to activate the baking powder.
- Lemon Zest: for flavor.
- Zero-Calorie Sweetener: I use monk fruit sweetener or stevia.
- Egg: to hold things together.
- Milk: I use skim milk to keep the points low. You can use any milk of choice, you’ll just have to calculate the point difference.
- Unsweetened Applesauce: in place of the oil, to make the recipe skinny.
- Lemon Juice: for flavor.
- Lemon Extract: for more flavor!
