Muffins are a meal-preppers dream. You’re making multiple things at one time, they’re easy to store and super easy to grab and eat when the notion strikes. Also, the older I get, the more I like all things lemon-flavored, so let’s make some lemon muffins today, shall we? Great for breakfast or a snack, you can’t go wrong.

Ingredients

For the Crumb Topping:

  • Flour: For texture.
  • Zero-Calorie Sweetener: I use monk fruit sweetener or stevia.
  • Light Butter: I use Country Crock light vegetable spread, but you can use whichever light butter you prefer.

For the Muffins:

  • Kodiak Cakes Flapjacks and Waffle Mix: I use this in place of the flour because it helps keep the points just a bit lower and adds a nice flavor and texture to the muffins.
  • Baking Powder: helps the muffins rise.
  • Salt: for flavor, and to activate the baking powder.
  • Lemon Zest: for flavor.
  • Zero-Calorie Sweetener: I use monk fruit sweetener or stevia.
  • Egg: to hold things together.
  • Milk: I use skim milk to keep the points low.  You can use any milk of choice, you’ll just have to calculate the point difference.
  • Unsweetened Applesauce: in place of the oil, to make the recipe skinny.
  • Lemon Juice: for flavor.
  • Lemon Extract: for more flavor!

Ingredients
  

For the Crumb Topping

  • Tbsp all purpose flour
  • Tbsp monk fruit sweetener
  • 2 Tbsp light vegetable oil spread

For the Muffins

  • 1 cup Kodiak Cakes Buttermilk flapjack & waffle mix
  • tsp baking powder
  • ¼ tsp salt
  • 1 tsp lemon zest
  • 7 Tbsp monk fruit sweetener
  • 1 large egg
  • cup skim milk
  • Tbsp unsweetened applesauce
  • 1 Tbsp lemon juice
  • ½ tsp lemon extract

Instructions
 

  • Pre-heat oven to 350F (180C). Grease and flour a 12 cup muffin tin.

Topping

  • In a small bowl mix together the flour and monk fruit sweetener. Add the butter and mix with a fork, pastry cutter or even clean hands to form coarse crumbs. Set aside.
    2½ Tbsp monk fruit sweetener, 2 Tbsp light vegetable oil spread, 3½ Tbsp all purpose flour

Muffins

  • In a medium bowl beat with a fork, the egg, milk, lemon juice, and unsweetened applesauce until well combined.
    1 large egg, ⅓ cup skim milk, 2½ Tbsp unsweetened applesauce, 1 Tbsp lemon juice
  • In a large bowl, whisk together the Kodiak pancake mix, baking powder, salt, zest, lemon extract, and monk fruit sweetener. Make a well in the center and add the beaten egg mixture and lemon juice. Mix just until flour is wet, about 15-16 stirs, no more.
    1 cup Kodiak Cakes Buttermilk flapjack & waffle mix, 1¼ tsp baking powder, ¼ tsp salt, 1 tsp lemon zest, 7 Tbsp monk fruit sweetener, ½ tsp lemon extract
  • Spoon the batter into the prepared muffin pan. Top with the crumb topping and bake for about 18-25 minutes or until toothpick comes out clean. Let cool about 10 minutes before removing from pan. Enjoy!
