Ingredients

Ground Beef: I used 96% lean, the leanest I could find, to keep the fat content as low as possible.

Carrots: Matchstick or shredded carrots will work best.

Tamari Lite: for the sauce, tamari is a gluten-free, brewed soy sauce. The light version is fewer points than soy sauce for the same flavor.

Rice Vinegar: for flavor.

Sugar-Free Syrup: I used Cary’s Sugar-Free Maple Syrup, in place of agave syrup or honey that has more points. Since this dish is so low in points, though, you can easily get by using the higher point syrup on this one.

Sesame Oil: this can be left out altogether to make this dish even skinnier, but I kept it in for the added flavor.

Aromatics: we’re adding some minced garlic and minced ginger for lots of good flavor.

Chili Garlic Sauce: this is a pepper sauce that I use in place of a red chili pepper, since those tend to be hard to come by in my area. It gives the dish a nice flavor and just a hint of some kick. Add more for a spicier kick or leave it out to keep the dish mild.

Garnish: sprinkle some sesame seeds and sliced green onion on top of your Skinny Korean Beef for some nice added flavor before you enjoy!

  • ¼ cup rice vinegar

  • 1 tsp sesame seeds

Instructions
 

  • In a large skillet, add the beef to the pan and cook, breaking it up with the side of a spoon or spatula, until it is no longer pink, about 4 to 5 minutes.

  • Add the carrots, tamari lite, rice vinegar, sugar-free syrup, sesame oil, garlic, ginger, and chili garlic sauce to the pan. Cook, stirring, until the mixed sauce is reduced, about 5 to 10 minutes.
