A couple of years ago, there used to be a restaurant here in Lubbock that had hands-down THE best chicken tortilla soup I’ve ever eaten. Sadly, the restaurant closed, and I’ve been wishing for that soup recipe ever since. It was light, packed with flavor, but not overpowering on the spice. Friends, I am so excited to share with you this very, very close recipe, Skinny Chicken Tortilla-less Soup. It’s so good, I hope you’ll give it a try.

I originally tried adding black beans. I will leave those out in the future, but it’s an option if you want to try that.

I also originally cubed the chicken before cooking, and I will leave the chicken breasts whole in the future and shred after cooking. Definitely the way to go on the chicken!

Ingredients
  

  • 3 chicken breast (boneless, skinless)
  • 10 cups chicken broth (reduced sodium)
  • 10 oz Rotel
  • 1 yellow onion (diced)
  • 1 red bell pepper (diced)
  • 1 green bell pepper (diced)
  • ½ cup cilantro (fresh, chopped)
  • 1 tsp dried oregano
  • ½ tsp chili powder
  • 1 tsp salt

Garnish

  • 1 cup reduced-fat shredded mozzarella
  • avocado
  • cilantro
  • green onion (sliced)
  • lime (wedge)

Instructions
 

  • In an 8-quart Instant Pot, add whole chicken breasts, chicken broth, Rotel, onion, bell peppers, cilantro, oregano, chili powder, and salt. Stir until mixed well.
    3 chicken breast, 10 cups chicken broth, 10 oz Rotel, 1 yellow onion, 1 red bell pepper, 1 green bell pepper, ½ cup cilantro, 1 tsp dried oregano, ½ tsp chili powder, 1 tsp salt
  • Place lid and cook on meat/stew setting for 45 minutes. Let slow-release.
  • Using two forks, shred the chicken inside the pot and give the soup another good stir.
  • Serve hot, garnished with reduced fat shredded mozzarella, and your favorite toppings including avocado, cilantro, green onion, and lime wedges.
    ½ cup cilantro, 1 cup reduced-fat shredded mozzarella, avocado, green onion, lime

Notes

This recipe could easily be divided into 8 servings for even fewer points!

  1. If there is no insta pot can the soup be made in a slow cooker or stove top ?

      Sure! You’ll just need to adjust the time so that the chicken cooks all the way through. I tend to like “low and slow” in that aspect so that the meat stays really tender and moist.
