The Italian blood running through my veins might make me a little biased on this one, but it’s already shot up to the top of my favorite recipes I’ve shared so far. Skinny Bruschetta Chicken is delicious, filling, and that tomato-basil topping could be eaten by the spoonful all by itself. Yum!

Ingredients

For the Chicken

  • Chicken Breast: I used 2 boneless, skinless chicken breast that I butterflied into 4 servings. You can use 4 chicken breasts for larger servings if you’d like, without adding any additional points if you’re on the Purple or Blue WW Plans.
  • Spices: We’re flavoring the chicken with some Italian Seasoning, Garlic Powder, Salt, and Pepper for flavor.
  • Olive Oil: for cooking the chicken in the skillet.
  • Cheese: I used reduced-fat shredded mozzarella. You can also use reduced-fat mozzarella slices instead.

For the Bruschetta Topping:

Tomatoes: I used Roma tomatoes because they have more tomato and fewer seeds, so they are ideal for dicing. You can use any kind of tomato you prefer or have on hand.

Basil: for flavor!

Balsamic Vinegar: for flavor.

Minced Garlic: for flavor.

Salt and Pepper: to taste.

Ingredients
  

The Chicken

  • 2 chicken breasts (boneless, skinless, butterflied)
  • 2 tsp Italian seasoning
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper
  • Tbsp olive oil (for the skillet)
  • ½ cup reduced-fat shredded mozzarella

The Bruschetta Topping

  • 5 Roma Tomatoes (diced)
  • 2 Tbsp minced garlic
  • Tbsp balsamic vinegar
  • 5 Tbsp basil (fresh, chopped)
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions
 

  • In a medium-sized bowl, combine the tomatoes, garlic, balsamic vinegar, basil, salt, and pepper. Stir to combine and set aside.

  • Prepare your chicken breasts. You can pound them to even thickness or leave them as is. Coat the chicken breasts evenly with the Italian seasoning, garlic powder, salt and pepper. Grill the chicken over high heat for 6-8 minutes per side or until cooked through.

  • When the chicken is cooked, top each piece with shredded mozzarella cheese and allow it to melt.
    ½ cup reduced-fat shredded mozzarella
  • Remove the chicken from the skillet/grill and let it rest for about 5 minutes. Top the chicken with the tomato basil topping and serve.
