Ingredients
Oat Flour: This is one of the secrets to making this recipe skinny. Instead of using all wheat-flour, we’re using homemade oat flour by blending old-fashioned oatmeal into a powder.
Self-Rising Flour: We’re keeping a little bit of the self-rising flour for the taste and consistency. I use self-rising flour to add some fluffiness to the pancakes, but if you only have all-purpose flour, just add in some extra baking powder.
Zero Calorie Sweetener: I use either monk fruit sweetener or stevia. You can use any zero-calorie sweetener of your choice.
Baking Powder: for fluffiness.
Salt: to activate the baking powder and add flavor.
Skim Milk: The milk will give the mixture the moisture it needs. I use skim milk because it’s lowest in points, but if you prefer to use another non-dairy milk, just be sure to calculate the points accordingly.
Egg: helps hold the mixture together.
Unsweetened Applesauce: this replaces the oil.
Vanilla: for flavor.
Easy Fluffy Pancakes From Scratch
Ingredients
- 1 cup oat flour
- ½ cup self rising flour
- 2 Tbsp stevia (granulated)
- 1 Tbsp baking powder (aluminum free)
- ½ tsp sea salt
- 1 ¼ cup skim milk
- 1 large egg
- 4 Tbsp unsweetened applesauce
- 1 tsp vanilla extract
Instructions
- In a medium-size mixing bowl, add and mix together your dry ingredients: oat flour, self-rising flour, stevia, baking powder, salt.
- In the same bowl, add your wet ingredients: skim milk, egg, unsweetened applesauce, vanilla extract. Mix well.
- Heat a griddle or skillet on medium heat. Spray with cooking spray. Once heated, take a large ice cream scoop (regular size) and use one scoop of the batter for each pancake, adding to the griddle. Wait for bubbles to appear and pop in the cooking batter before flipping. Cook the other side until browned. Repeat until all batter is used.
