Here’s a skinny spin on one of my favorite go-to dinner meals. The smoked sausage and veggies in a creamy, cheesy sauce make this bowtie pasta dish a hearty, filling meal without packing on the pounds. Great for meal prep or a quick weeknight dinner that the whole family will enjoy.

Ingredients

Turkey Smoked Sausage: I use half a package of the Eckrich brand skinless lowfat turkey sausage.

Vegetables: I use half an onion, 4-5 jalapenos (deseeded), and a red bell pepper. You can use other vegetables as desired.

Chicken Broth: I use the reduced-sodium chicken broth, to cook the farfalle.

Pasta: I use a mini farfalle, or the bowtie noodles. Other noodles such as penne, elbows, or rotini would work just as well.

Fat-Free Cream Cheese: this makes the dish creamy and helps the shredded cheese spread through the dish without drying out.

Reduced-Fat Shredded Cheese: I use a reduced-fat fiesta blend, but any reduced-fat shredded cheese should work well.

Salt and Pepper: to taste. I add the salt and pepper when I’m sauteing the sausage and vegetables.

Ingredients
  

  • 7 oz skinless turkey smoked sausage (sliced)
  • ½ medium onion (sliced)
  • 1 medium red bell pepper (deseeded, sliced)
  • 4 medium jalapeno peppers (deseeded, sliced)
  • 4 cups chicken broth (reduced sodium)
  • 8 oz farfalle (bowtie pasta)
  • 8 oz fat-free cream cheese (softened)
  • ¾ cup reduced-fat shredded cheese (fiesta blend or similar)
  • 1 pinch salt (to taste)
  • 1 pinch pepper (to taste)

Instructions
 

  • In a large skillet, brown the sliced turkey sausage.
    7 oz skinless turkey smoked sausage
  • Add in the sliced onion, bell pepper, and jalapeno. Saute until vegetables are slightly softened to desired consistency. Add in salt and pepper to taste.
    ½ medium onion, 1 medium red bell pepper, 4 medium jalapeno peppers, 1 pinch salt, 1 pinch pepper
  • Add in chicken broth and bowtie pasta (or pasta of choice). Bring to a boil, then reduce heat and simmer for about 8-10 minutes, stirring frequently to prevent from burning to bottom of pan.
    4 cups chicken broth, 8 oz farfalle
  • Once pasta has softened and absorbed much of the chicken broth, add in the cream cheese and shredded cheese. Stir and serve. Makes 6 servings.
    8 oz fat-free cream cheese, ¾ cup reduced-fat shredded cheese
