Muffins are a meal-preppers dream. You’re making multiple things at one time, they’re easy to store, and super easy to grab and eat when the notion strikes. Also, the older I get, the more I like all things lemon-flavored, so let’s make some lemon muffins today, shall we? Great for breakfast or a snack, you can’t go wrong.

This isn’t just a recipe. It’s an entire meal! In fact, it’s almost the exact replica of my lucky New Year’s Day meal, and I’ll tell you why here in just a moment. Today, we’re making Barbecue Ribs, Curried Potatoes, and Skinny Coleslaw.

Yes, friends, you may need to dip into your fit points or weeklies for this meal, or budget your breakfast and lunch, but sometimes your body needs some good, old-fashioned comfort food, and this is exactly what hits the spot for me. 

Can we just talk about why the Zuppa Toscana at Olive Garden is the most “copycat” remade recipe, like, ever? Because it really is just so good. It’s warm and filling and is my go-to meal just about every time I ever eat at the OG. (Remind me to do a skinny copycat of that Chicken Scampi sometime.)
