Ingredients
  

  • ½ cup oat flour
  • ½ cup self rising flour
  • 1.5 tsp baking powder
  • ½ tsp salt
  • 2 Tbsp stevia (granulated)
  • 1 cup plain non-fat greek yogurt
  • 1.5 tsp vanilla extract
  • 2 large eggs
  • cup unsweetened applesauce
  • 3 Tbsp rainbow sprinkles

Instructions
 

  • Preheat oven to 350 F.
  • In a medium size mixing bowl, add all ingredients, leaving the sprinkles for last once you have everything else combined well. Stir in the sprinkles.
  • Scoop the batter evenly into 12 baking cups.
  • Bake at 350 F for 20-25 minutes, until toothpick comes out clean.
