Lemon Blueberry Baked Donuts

Ingredients
- 1 cup oat flour
- ½ cup self-rising flour
- ½ cup stevia (granulated)
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 large egg
- ⅓ cup unsweetened applesauce
- 2 tsp lemon zest
- 1 Tbsp lemon juice
- ½ tsp lemon extract
- ¾ cup plain nonfat greek yogurt
- ⅓ cup skim milk
- 1 cup fresh blueberries (mashed)
Glaze
- 1 cup stevia (confectioners)
- 1.5 Tbsp skim milk

Instructions
- Preheat oven to 325 F.
- In a medium-size mixing bowl, mix together all your dry ingredients: oat flour, self-rising flour, granulated stevia, baking soda, baking powder, and salt.
- In the same bowl, add in wet ingredients: egg, yogurt, unsweetened applesauce, skim milk, lemon zest, lemon juice, lemon extract, and mashed blueberries. Mix until all ingredients are well combined.
- Transfer the batter to a piping bag and pipe evenly into donut silicone or tin molds. Makes 18 small-sized donuts.
- Bake at 325 for about 20 minutes or until toothpick comes out clean. Let cool.
- Create the glaze using the remaining confectioner's stevia and skim milk. Mix in a small bowl. Drizzle over donuts as desired.
