Ingredients
  

  • 3 small buttermilk biscuits (quartered)
  • 12 large eggs (whisked)
  • ½ cup red bell pepper (diced)
  • 5 oz lean ham (cubed)
  • ½ cup reduced fat shredded cheese
  • ½ tsp salt
  • ¼ tsp ground black pepper

Instructions
 

  • Preheat oven to 375 and grease your muffin tin or place your silicone baking cups.
  • Press the biscuit quarters flat with your hands and press then them into the muffin cups. Fill the biscuit cups evenly with the ham, cheese, and red bell pepper.
  • Whisk eggs in a separate bowl and fill the cups evenly with the egg mixture. Season with salt and pepper.
  • Bake the cups for 20 to 25 minutes, until the eggs have set and the biscuits are golden brown.

I ended up baking for 30-35 minutes to get the eggs fully cooked.
